GIS can help in many different ways, you can show all water resources in the general area, distance to and from those resources, classify them by resource type, you can show water-runoff areas, and watersheds. You can even incorporate GPS data into the coverage. The results are endless depending on how you setup your coverage and your database. I would recommend using a personal geodatabase to help organize all of your data.
