Why do some Sulcata Tortoise's have ridges and others don't?

I am getting my Sulcata next week and this has been eating at me for awhile now. Why is it that some of them have ridges on their shells but some others have no ridges at all?Why do some Sulcata Tortoise's have ridges and others don't?
